Fresh Red Bell Pepper Pasta: Homemade Recipe
Fresh Red Bell Pepper Pasta: Color and Flavor Infused Directly into the Dough
Who says homemade fresh pasta always has to be the same color?
With a little imagination and just a few ingredients, you can create unique, colorful doughs full of personality.
Today, we’re making a truly special recipe: Fresh Red Bell Pepper Pasta, prepared using the PASTAMAGIC Sirge pasta machine.
The secret lies in using the red bell pepper in two ways: first, its juice to prepare the dough, and then a portion of the pulp to give the pasta its distinctive, speckled appearance.
The result? Fresh pasta with a warm, inviting color—perfect for surprising your family with a first course that’s a little out of the ordinary.
Ingredients for Red Bell Pepper Pasta
- 3 measuring cups of "00" flour
- 1 red bell pepper
- Approximately 100 ml of strained bell pepper juice
- A portion of the drained bell pepper pulp (reserved after straining)
These quantities refer to the original recipe. The consistency of the dough may vary depending on the type of flour used and the natural water content of the bell pepper.
Step-by-Step Preparation
1. Preparing the red bell pepper
Wash the bell pepper thoroughly, then remove the stem, seeds, and the white inner membranes.
Cut it into small pieces and blend until smooth.
Strain the blended bell pepper to separate the liquid from the drier pulp.
For this recipe, you will need approximately 100 ml of bell pepper juice.
Sirge Tip: If you have a juicer, you can extract the juice even more quickly and easily separate the fibrous pulp.
Don't throw away the pulp! We will use some of it later.
2. Adding the flour to the PASTAMAGIC
Pour 3 measuring cups of "00" flour into the pasta machine's container.
Secure the transparent top lid and select program 3, as specified in the original recipe.
3. Adding the bell pepper juice
Start the process and gradually pour in the 100 ml of bell pepper juice over the course of about 2 minutes.
It is important to add the liquid slowly to ensure it is evenly distributed throughout the flour.
As it is processed, the dough will begin to take on a beautiful, natural orange-red color.
4. Adding the bell pepper pulp
About 1 minute after you have finished adding the liquid, pause the program.
Wait for all moving parts to come to a complete stop, then open the top lid according to the machine's instructions.
Scatter a small amount of the dried bell pepper pulp—which you set aside earlier—over the mixture.
This step is the little secret behind the recipe: the pulp adds character to the dough and creates those distinctive little specks that you can also see in our photograph.
5. Finishing the process
Close the lid securely and restart program 3.
Let the PASTAMAGIC run until the extrusion process is complete.
As the pasta emerges from the die, cut it to your desired length and place it on a suitable, lightly floured surface.
Your fresh red bell pepper pasta is ready!
Naturally colored fresh pasta
One of the best things about this recipe is its color.
There’s no need for artificial food coloring—the red bell pepper gives the dough a warm, unique hue.
Furthermore, by including some of the pulp, you get a pasta with a rustic, artisanal look.
It’s a simple way to experiment with new ingredients and make preparing homemade pasta even more fun.
How should you serve this Red Bell Pepper Pasta?
This pasta pairs well with a variety of different sauces and ingredients.
We recommend choosing seasonings that complement the flavor of the bell pepper without completely overpowering it.
- Butter and sage: a simple and delicate seasoning.
- Fresh cherry tomatoes and basil: for a Mediterranean-style first course.
- Ricotta and Parmesan: for a soft, creamy texture.
- Sautéed zucchini and extra virgin olive oil: to highlight the vegetables.
- Extra virgin olive oil and aromatic herbs: to let the pasta itself take center stage.
