This pasta is ideal served with butter and sage, crispy pancetta, or a simple cheese spread.
Ingredients for Fresh Pasta
3 scoops of type 00 flour
200 ml of cooked pea cream soup
30 ml of water
Preparation
Prepare a cooked pea soup by blending them until smooth.
Pour the type 00 flour into the bowl of the food processor. Pasta.
Slowly add the pea puree and the 30 ml of water.
Run the mixer until the dough is grainy and well-hydrated.
If necessary, add a little flour or water to achieve the ideal consistency.
