Homemade Pea Pasta

An original and colorful recipe for fresh homemade pea pasta, with a delicate and natural flavor. Thanks to the creamy pea sauce in the dough, the pasta takes on a bright green color and a slightly sweet flavor, perfect for light and creative dishes.

This pasta is ideal served with butter and sage, crispy pancetta, or a simple cheese spread.


Ingredients for Fresh Pasta

  • 3 scoops of type 00 flour

  • 200 ml of cooked pea cream soup

  • 30 ml of water


Preparation

  1. Prepare a cooked pea soup by blending them until smooth.

  2. Pour the type 00 flour into the bowl of the food processor. Pasta.

  3. Slowly add the pea puree and the 30 ml of water.

  4. Run the mixer until the dough is grainy and well-hydrated.

  5. If necessary, add a little flour or water to achieve the ideal consistency.

  6. Extrude the pasta into the desired shape and let it dry for a few minutes before cooking.


Cooking the pasta

Cook in abundant salted water for about 3-4 minutes.
